Grass-Fed Beef (Seattle)

The Food: We’re Highland Beef believers. There’s succulent flavor and tender texture in every bite of this beef from the verdant wilds of Lyle, Washington. This rotating selection is from cattle raised in the mountain meadowlands, where rain, mist, sun, and elevation combine to create the ultimate nutrient-rich environment for the herd. The result? Truly. Transcendent. Meat.

The Farm: The old-breed Highland cattle at Little Seven Seven Ranch are a truly majestic herd. These high-brow beasts roam 1700 acres in the Columbia River Gorge, drinking from creeks and streams, and enjoying a bio-diverse diet of native grasses, legumes, and a variety of brush. This herd is happy, healthy, and cared for by responsible stewards of the land.
