
Ingredients:
1 head cauliflower
1 tbs olive oil
1 tbsp honey
1 tbsp pumpkin or sunflower seeds
2-3 tbsp raisins
1 tsp turmeric
¼ cup sheep’s milk feta, crumbled
1 tsp apple cider vinegar
Salt, pepper to taste
Italian parsley for garnish
Instructions:
1. Preheat the oven to 425 F
2. Cut the cauliflower into large florets and toss cauliflower with olive oil and salt. Roast on a baking sheet for 20-30 minutes, tossing half way through
3. Remove from the oven and let cool 15 minutes
4. In a large bowl or serving dish toss the cauliflower with all of the other ingredients and serve
