
It's citrus season! Slice up the delicious citrus from your MilkRun box and assemble an easy and refreshing citrus salad.
Ingredients
- 1 Cara Cara Orange
- 1 Blood Orange
- 1 Grapefruit
- 1 Pummelo
- 1 Lemon
- 1/2 head of Fennel
- 3-4 Radishes
- 2 Tbsp Red Onion, thinly sliced
- 2 Tbsp Olive Oil
- Salt & Black Pepper
Instructions
- Cut the citrus. For half of the fruit, cut off the top and bottom and run a knife down the sides to peel it, cut between the sections to remove segments without any white membrane. For the other half, peel the same way and slice across the center. Really, you can cut the citrus however you want, keeping the membranes to a minimum will make the salad easier to eat.
- Shave the fennel thinly on a mandolin, repeat with the radish. Save some of the fennel fronds for garnish. To plate, toss the fennel and radish with half the olive oil and a squeeze of lemon juice. Layer the citrus with the radish and fennel on a platter, finish with the remaining oil drizzled on top, a squeeze of lemon juice, salt, and pepper.
You can also incorporate thinly sliced greens and kohlrabi and squeeze the citrus juice out from the rinds and turn it into a dressing!
