Practices: Tabor Bakery mills its own flour from diverse, organically-grown grains. This allows the bakers to better define their textures, their flavors, and even adjust their recipes to serve a more diverse range of dietary needs (all of their traditional loaves are vegan unless advertised otherwise).
Fun Fact: A giant wood-fired hearth really sets the atmosphere for this old-world bakery. Due to summer wildfire season, it’s not always in use, but when it is, Tabor Bread is the coziest bakery in town.

What does “made from scratch” really mean? It might describe a home baker following a recipe, throwing raw ingredients together to make a loaf of bread. When we see a local bakery advertising something is made from scratch, we assume it’s made without any shortcuts; no premade dough, nothing. But Tabor Bread? They take it to the next level by milling their own flour from diverse, organically-grown grains.
Tissa Stein opened Tabor Bread in 2012, embracing an old-world charm that resonates in everything from its solid hickory floors to its wood-burning hearth (a comfort during the cold and rainy Northwest winters). Staying true to its rustic character, the bakery is equipped with its very own in-house mill, a feature that’s gained both local and national acclaim. By controlling the way their flour is made, Tabor Bread’s bakers are able to better define their textures, their flavors, and even adjust their recipes to serve a more diverse range of dietary needs (all of their traditional loaves are vegan unless advertised otherwise).
Another fun fact? Tabor Bread sources as many local and organic ingredients as possible, sometimes even procuring ingredients from some of our partners, like Pablo Munoz Farms, to produce delicious seasonal fruit tarts and pastries.
In our hunt for a local Portland bread that “rises” to the occasion, we stumbled upon Tabor’s Country Pan Loaf, a tasty fluffy creation that’s versatile for sandwiches, French onion soup croutons, and endless toasty treats. This 2-day fermented sourdough loaf delivers a one-two punch of rustic flavor and a pillowy crumb texture. As many Portlanders know, it’s soul-nourishing stuff, and we’re pleased to be adding it to our selection of staples for your home.
