Beet, Potato and Raab Soup


Box Included Ingredients:

  • Beets
  • Fingerling Potatos
  • Raab
  • Mushrooms

Additional Optional Ingredients:

  • Heavy cream, Yogurt, Miso, Butter or EVOO
  • Stock
  • Fresh herbs
  • Chile Oil or Flakes for topping

Directions:

  1. Follow this recipe for a base to work from.
  2. From here you can sub the Parsnips for the Potatoes sliced or cubed however it makes sense for you.
  3. You can use a potato masher instead of the immersion blender if you don't feel like dealing with it. It will yeild a more chunky final product but will liik very nice.
  4. For finishing you can toss the sliced Raab in for the last few minutes of cooking after blending to add a texture and color contrast.
  5. Adding sauteed Mushrooms will highlight the earthy components from the beets and really set this over the top.

Additional Info:

  • A sliced steak would also be nice in here!

PArsnip, beet and Leek soup


Box Included Ingredients:

  • Beets
  • Parsnips
  • Leek
  • Raab
  • Mushrooms
  • Chives

Additional Optional Ingredients:

  • Heavy Cream, Yogurt, Butter, Miso, Stock, EVOO (or Creme Fraiche??)
  • Stock
  • Fresh Herbs

Directions:

  1. Follow this recipe for a base to work from.
  2. From here you can add the leeks in with the Beets and Parsnips, Also you can sauté them beforehand to speed up a little of the cooking and everything can get a little color.
  3. You can also use a potato masher instead of an immersion blender if you want a less uniform & chunky final product
  4. For finishing you can toss the sliced Raab in for the last few minutes of cooking after blending to add a texture and color contrast.
  5. Adding sauteed Mushrooms on top with chives will highlight the earthy components from the beets and really set this off. Also if you happen to have Creme Fraiche... Woah.

Beet and Carrot Soup




Included Box Ingredients:

  • Beets
  • Carrot
  • Kale
  • Fennel
  • Onion

Additional Optional Ingredients:

  • Heavy Cream, Yogurt, Butter, Miso, Stock, EVOO (or Creme Fraiche??)
  • Stock
  • Fresh Herbs

Directions:

  1. Follow this recipe for a base to work from.
  2. From here you can add a sliced yellow onion and sub the Parsnips for the Carrots sliced or cubed however it makes sense for you.
  3. You can use a potato masher instead of the immersion blender if you don't feel like dealing with it. It will yeild a more chunky final product but will liik very nice.
  4. For finishing you can toss the sliced Kale in for the last few minutes of cooking after blending to add a texture and color contrast.
  5. Adding sauteed Fennel will highlight the earthy components from the beets and really set this over the top.
