
This quick bread recipe is ready in just about an hour and will leave the kitchen smelling delicious for long after it's done.
Ingredients
- 2 cups mashed pumpkin*
- 2 ½ cup flour
- 1 ¾ cup sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 1 ½ tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. ground ginger
- ⅓ cup apple sauce
- 1 tsp. Vanilla extract
- ⅓ cup milk
*Substitute just about any cooked, mashed squash here. Try butternut, acorn, or kabocha squash.
For the mash, cut the gourd in half & remove the seeds. Bake at 350 degrees for about an hour or until fork tender. Let cool, scrape out the flesh into a bowl and mash with a fork.
Instructions
- Grease your bread loaf pan and preheat the oven to 350 degrees.
- Combine flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ground ginger in a bowl and whisk to combine. In a large mixing bowl, stir together mashed pumpkin, apple sauce, vanilla extract, and milk.
- Adding about 1 cup of dry ingredients at a time to the mashed pumpkin mixture, mix ingredients until the dry ingredients are fully combined, once there are no lumps of flour visible, stop mixing.
- Pour mixture into greased pan and bake for 45 - 1 hour. When a tester inserted into the center of the loaf comes out clean, it’s ready to come out of the oven. Let rest for about 5 minutes before removing your bread from the pan.
