RECIPES | Pumpkin Bread

This quick bread recipe is ready in just about an hour and will leave the kitchen smelling delicious for long after it's done.

Ingredients

  • 2 cups mashed pumpkin*
  • 2 ½ cup flour
  • 1 ¾ cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 ½ tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. ground ginger
  • ⅓ cup apple sauce
  • 1 tsp. Vanilla extract
  • ⅓ cup milk

*Substitute just about any cooked, mashed squash here. Try butternut, acorn, or kabocha squash.

For the mash, cut the gourd in half & remove the seeds. Bake at 350 degrees for about an hour or until fork tender. Let cool, scrape out the flesh into a bowl and mash with a fork.

Instructions

  1. Grease your bread loaf pan and preheat the oven to 350 degrees.
  2. Combine flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ground ginger in a bowl and whisk to combine. In a large mixing bowl, stir together mashed pumpkin, apple sauce, vanilla extract, and milk.
  3. Adding about 1 cup of dry ingredients at a time to the mashed pumpkin mixture, mix ingredients until the dry ingredients are fully combined, once there are no lumps of flour visible, stop mixing.
  4. Pour mixture into greased pan and bake for 45 - 1 hour. When a tester inserted into the center of the loaf comes out clean, it’s ready to come out of the oven. Let rest for about 5 minutes before removing your bread from the pan.
