This is my go to breakfast if I have a busy morning. At the beginning of the week I'll make a 2-3 avocado batch of schmear and you're off to the races from there. While your toast is toasting your eggs are cooking, you're fed and out the door in 10min. 

This is my Sunday morning secret weapon. Two eggs per person, whatever you have kicking around in the fridge, and you're in business. The key to a good omelette is patience.
