We love this refreshing Watermelon Salad with crumbly bites of Feta cheese and crisp Cucumbers. It's a great summer recipe to enjoy after dancing around the garden sprinkler!
1 small watermelon
½ cup feta
4 pickling cucumbers
½ bunch radishes
½ small jalapeño
4-5 green onions
¼-½ cup thinly sliced red onion (about 1/4th a small red onion, or to taste)
2 tbsp olive oil
½ - 1 lemon, juiced
Balsamic vinegar (optional)
Salt and pepper
Cut off each end of the watermelon, a small slice to remove the rind. Cut in half. With the flat side down, cut the rind off the melon by running a large chef’s knife down the curve of the fruit. Repeat this around the fruit and for each side until all of the rind is removed.
Cut the melon but cutting ½ inch slices, turning 90 degrees and cutting ½ slices again so you have sticks. Lay the sticks on their side and cut into cubes. Set aside in a large bowl in the refrigerator while preparing the other ingredients.
Prepare the other produce and add to the bowl with the watermelon. Cut the cucumbers in half longways and in half the same way again so there are 4 long wedges. Cut across to make smaller chunks. Thinly slice radishes and jalapeño on a mandoline or with a knife. Thinly slice scallions at a diagonal. Cut the feta into cubes or crumble, whatever your preference is.
Toss the ingredients with lemon juice, olive oil, salt and pepper to serve. Add salt and dressing just before serving. Try it with balsamic vinegar too!
